  • 1 baguette or rustic Italian bread, sliced into ½-inch (1.3 cm) rounds
  • 23 cloves garlic, peeled and halved
  • Extra virgin olive oil, for brushing
  • Topping Option 1: Classic Tomato Basil – 2 cups cherry tomatoes, quartered
  • ¼ cup fresh basil leaves, chopped
  • 1 tbsp balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • Topping Option 2: Creamy Ricotta & Honey – 1 cup whole milk ricotta cheese
  • 2 tbsp honey
  • Freshly cracked black pepper
  • Topping Option 3: Mushroom & Thyme Sauté – 1 cup cremini mushrooms, sliced
  • 1 tbsp unsalted butter
  • 1 tsp fresh thyme leaves
  • Pinch of salt
  • Topping Option 4: Avocado & Feta – 1 ripe avocado, mashed
  • ½ cup crumbled feta cheese
  • Juice of ½ lemon
  • Pinch of chili flakes (optional)
  • Topping Option 5: Prosciutto & Fig Jam – 6 thin slices prosciutto
  • 2 tbsp fig jam
  • Topping Option 6: Roasted Red Pepper & Goat Cheese – 1 roasted red bell pepper, sliced
  • ½ cup goat cheese, softened

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the baguette into about ½-inch thick rounds. Arrange them on a baking sheet in a single layer. Brush each slice lightly with olive oil on both sides.
  2. Place the baking sheet in the oven and toast for 8-10 minutes, flipping halfway through, until bread is golden and crisp but not burnt. Alternatively, grill slices 1-2 minutes per side on a grill pan over medium-high heat.
  3. As soon as the bread comes out, gently rub the cut side of the garlic cloves over each slice. Set aside to cool slightly.
  4. Prepare Classic Tomato Basil topping by combining quartered cherry tomatoes, chopped basil, balsamic vinegar, salt, and pepper in a bowl. Let marinate.
  5. Cook Mushroom & Thyme topping by heating butter in a sauté pan over medium heat. Add sliced mushrooms, salt, and thyme. Cook, stirring occasionally, until mushrooms are browned and softened, about 5-7 minutes. Remove from heat and let cool.
  6. Mix creamy ricotta & honey by stirring ricotta with honey and black pepper until smooth and creamy.
  7. Prepare Avocado & Feta topping by mashing avocado with lemon juice, seasoning with salt and chili flakes if desired, then folding in crumbled feta gently.
  8. Slice prosciutto into smaller strips if needed and set aside with fig jam in a small bowl for easy spreading.
  9. Slice roasted red pepper into strips and have softened goat cheese ready for spreading.
  10. Arrange toasted bread on a large platter or board. Place each topping in small bowls with spoons or spreaders. Let everyone build their own bruschetta.

Notes

Toast bread just before serving to keep it crisp. Prepare toppings ahead except avocado which should be mashed and dressed just before serving. If mushrooms seem dry, add a splash of olive oil or butter before serving. Encourage guests to mix and match toppings for creative combinations.
