  • 1 cup full-fat Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 small garlic clove, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 1 teaspoon honey or maple syrup

Instructions

  1. Rinse and dry cucumbers. Slice thinly to about ⅛ inch (3 mm) thickness. Peel if skin is tough.
  2. Place cucumber slices in a colander, sprinkle with ½ teaspoon sea salt, toss gently, and let sit for 10 minutes to draw out excess water.
  3. Press cucumbers gently with hands or a clean towel to remove released liquid.
  4. In a mixing bowl, whisk together Greek yogurt, lemon juice, olive oil, and minced garlic until smooth.
  5. Add chopped dill, black pepper, and optional honey or maple syrup. Taste and adjust salt if needed.
  6. Add drained cucumber slices to the dressing and toss gently to coat.
  7. Cover and refrigerate for at least 15 minutes to let flavors meld.
  8. Stir gently before serving and garnish with extra dill if desired.
