A quick and refreshing summer salad featuring grilled watermelon, crumbled feta, fresh mint, and a honey lime dressing that balances sweet, salty, and tangy flavors.

Ingredients

  • 6 cups watermelon, cut into 1-inch thick wedges or large cubes
  • 1 cup crumbled feta cheese (about 150 grams)
  • 1/3 cup fresh mint leaves, roughly chopped
  • 2 tablespoons honey
  • Juice of 2 medium limes (about 3 tablespoons)
  • 1 tablespoon extra virgin olive oil (optional)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse and dry the watermelon. Slice into 1-inch thick wedges, then cut each wedge into 2-inch chunks or leave as slices.
  2. Preheat grill or grill pan to medium-high heat (around 400°F).
  3. Lightly brush both sides of watermelon pieces with olive oil to prevent sticking.
  4. Grill watermelon for 2-3 minutes per side until grill marks appear and watermelon softens slightly.
  5. While grilling, whisk together honey, lime juice, olive oil, salt, and pepper to make the dressing.
  6. Once watermelon has cooled slightly, place in a mixing bowl. Crumble feta over the top, add chopped mint, and drizzle honey lime dressing.
  7. Gently toss to coat without breaking watermelon pieces.
  8. Season with additional sea salt and freshly ground black pepper to taste. Serve immediately or refrigerate up to 2 hours.

Notes

Do not overcook the watermelon; grill just until light caramelization appears to keep texture firm. Brush olive oil on watermelon, not the grill, to prevent sticking. Let watermelon cool slightly after grilling before assembling to maintain shape and texture. Prepare dressing in advance to save time. Best served fresh or within 2 hours refrigerated.
