Fresh No-Bake Peach Cheesecake Tart

A quick and easy no-bake peach cheesecake tart with a creamy filling and a crunchy graham cracker crust, perfect for summer gatherings and warm days.

  • 1 ½ cups (150g) graham cracker crumbs
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup (240ml) heavy whipping cream, cold
  • 34 fresh peaches, peeled and thinly sliced
  • Optional: 1 tablespoon apricot jam, warmed

Instructions

  1. Combine the graham cracker crumbs, melted butter, and sugar in a medium bowl. Stir until the mixture looks like wet sand. Press the crumbs firmly and evenly into the bottom and up the sides of your tart pan. Use the back of a spoon or a flat-bottomed glass to compact it tightly. Chill the crust in the fridge for at least 15 minutes to set while you prepare the filling.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, about 2-3 minutes. Add the sugar, vanilla extract, and lemon juice, then continue to beat until well combined and creamy.
  3. In a separate chilled bowl, whip the cold heavy cream until soft peaks form, about 3-4 minutes on medium-high speed.
  4. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula, being careful to keep the airiness intact.
  5. Spoon the creamy filling into the chilled crust and smooth the top evenly with a spatula. Refrigerate the tart for at least 4 hours or overnight to let the filling set and flavors meld.
  6. Just before serving, peel and thinly slice the peaches. Arrange the slices in a pretty pattern over the top of the chilled filling. For a glossy finish, gently brush the peaches with warmed apricot jam using a pastry brush (optional).
  7. Carefully remove the tart from the pan and transfer to a serving plate. Cut into slices with a sharp knife, wiping it clean between cuts to keep the slices neat and pretty.

Notes

Softening cream cheese properly is key to avoid lumps. Chill the bowl and beaters before whipping cream for best results. Fold whipped cream gently to keep the filling airy. Chilling the tart overnight improves texture and flavor. Slice peaches just before serving to keep them fresh. Use a sharp knife warmed under hot water and wiped dry between cuts for neat slices.
