Fresh Patriotic Popsicles Three Ways

Easy homemade summer treats featuring vibrant red, white, and blue layers made from fresh berries, creamy Greek yogurt, and zesty citrus. Perfect for summer gatherings and a refreshing, light dessert.

  • 1 cup fresh strawberries, hulled and chopped
  • 1/2 cup fresh blueberries
  • 12 tablespoons granulated sugar or honey, adjust based on fruit sweetness
  • 1 tablespoon fresh lemon juice
  • 1 cup plain Greek yogurt
  • 12 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)
  • 1 cup fresh orange juice, freshly squeezed
  • 1 tablespoon fresh lime juice
  • 1 tablespoon agave syrup or simple syrup

Instructions

  1. Prepare the berry layer: In a blender, combine the chopped strawberries, blueberries, sugar or honey, and fresh lemon juice. Blend until smooth but still a bit textured (about 30 seconds). Taste and adjust sweetness if needed. For seed-free popsicles, press the puree through a fine mesh strainer into a bowl.
  2. Mix the creamy layer: In a separate bowl, whisk together the Greek yogurt, honey or maple syrup, and vanilla extract until smooth. Use room temperature yogurt for easier mixing.
  3. Make the citrus layer: Blend fresh orange juice, lime juice, and agave or simple syrup until combined. Optionally, stir in finely chopped mint leaves.
  4. Assemble the popsicles: Spoon about 2 tablespoons of the berry puree into each mold, then freeze for 15-20 minutes until slightly firm. Next, add a layer of the creamy yogurt mixture, about 2 tablespoons per mold, and return to the freezer for another 15-20 minutes. Finally, top with the citrus layer, filling the molds to the top. Insert sticks if molds don’t have built-in ones, then freeze for at least 4 hours, preferably overnight.
  5. Unmold and serve: Run warm water briefly around the outside of the molds to loosen. Gently pull on the sticks and enjoy. Let sit out a few minutes if stubborn to soften slightly without melting.

Notes

Freeze each layer until just firm to prevent colors from bleeding. Use thick Greek yogurt for the creamy layer to maintain separation. Adjust sweetness before freezing as freezing dulls sweetness. For vegan option, substitute Greek yogurt with coconut or almond milk yogurt and use maple syrup instead of honey. To unmold, run warm water briefly around molds and gently pull sticks. Popsicles keep well for up to 2 weeks in an airtight container.
