  • 1 cup sliced fresh strawberries

Instructions

  1. Slice the rind off the watermelon and cut into 1-inch thick rounds. Pat dry with paper towels to remove excess moisture.
  2. In a medium bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and honey until smooth and fluffy. Scrape down the sides as needed.
  3. Rinse the berries gently under cold water and pat dry. Slice the strawberries thinly.
  4. Spread a generous layer of cream cheese frosting over each watermelon round using a spatula or butter knife.
  5. Arrange the blueberries, sliced strawberries, and blackberries over the frosting. Scatter torn fresh mint leaves on top.
