  • 2 tablespoons fresh mint leaves, roughly chopped or whole for garnish (optional)
  • 23 tablespoons raw or wildflower honey
  • 1 tablespoon fresh lime juice
  • Optional toppings: crumbled feta cheese, chia seeds

Instructions

  1. Slice the watermelon: Place the watermelon on your cutting board and carefully slice off both ends to create flat surfaces. Then cut a 1-inch thick round slab from the center (about 10-12 inches diameter). This will be your pizza base.
  2. Prepare the fruit toppings: Rinse all berries and kiwis thoroughly. Hull and slice the strawberries, peel and thinly slice the kiwis. Gently toss them in a bowl to combine.
  3. Make the honey-lime drizzle: In a small bowl, whisk together the honey and fresh lime juice until smooth. If honey is too thick, warm it slightly in the microwave for 10 seconds to loosen.
  4. Assemble the pizza: Lay the watermelon slab flat on your serving platter. Evenly spread the mixed fruit over the watermelon surface, layering with care so each slice gets a bit of everything. Sprinkle fresh mint leaves over the top for a pop of color and aroma.
  5. Drizzle and optional toppings: Using a spoon, drizzle the honey-lime mixture over the fruit and watermelon base. If desired, add crumbled feta or chia seeds for extra flavor and nutrition.
