  • 1/3 cup vegetable oil (or melted coconut oil)
  • 2 large eggs (room temperature)
  • 2 tablespoons cornstarch
  • 1/3 cup rainbow sprinkles (plus extra for rolling or topping)
  • 1/2 teaspoon pure vanilla extract (optional)
  • 4 ounces cream cheese, softened (full-fat recommended)
  • 2 tablespoons unsalted butter, softened
  • 1 1/2 cups powdered sugar (sifted)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • Extra sprinkles for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the Funfetti cake mix, cornstarch, and rainbow sprinkles.
  3. Add the vegetable oil, eggs, and vanilla extract (if using). Stir with a rubber spatula until a thick, slightly sticky dough forms. Do not overmix.
  4. Use a cookie scoop or spoon to portion out tablespoon-sized balls of dough. Roll in extra sprinkles if desired and place 2 inches apart on the baking sheet.
  5. Bake for 9-11 minutes, until edges are set and tops are just barely golden. Centers should look soft and puffy.
  6. Remove from oven and let cookies cool on the tray for 2 minutes, then transfer to a wire rack to cool completely.
  7. While cookies cool, beat the softened cream cheese and butter together in a medium bowl until smooth.
  8. Add powdered sugar, vanilla extract, and a pinch of salt. Mix until creamy and smooth, about 2-3 minutes. Adjust consistency with more powdered sugar or a splash of milk if needed.
  9. Once cookies are completely cool, spread or pipe cream cheese frosting onto each cookie. Top with extra sprinkles.
  10. Let frosting set for 10-15 minutes before serving, or enjoy immediately.

Notes

For extra soft cookies, do not overbake—remove when just set. If dough is too sticky, chill for 10 minutes. Use jimmies or confetti-style sprinkles for best results. Store frosted cookies in the fridge for up to 5 days. For gluten-free or dairy-free adaptations, use appropriate cake mix and substitutes for cream cheese and butter.
