These garlic butter grilled shrimp skewers are a quick and easy summer BBQ favorite, featuring juicy shrimp coated in a luscious garlic butter glaze with a bright lemon finish.

  • 1 pound large shrimp, peeled and deveined, tails on
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, finely minced
  • 1 medium lemon, zested and juiced
  • 2 tablespoons fresh parsley, finely chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)

Instructions

  1. Preheat the grill to medium-high heat, about 375–400°F (190–200°C). Clean and lightly oil the grates to prevent sticking.
  2. In a mixing bowl, combine melted butter, minced garlic, lemon zest, lemon juice, olive oil, salt, pepper, and red pepper flakes if using. Mix well.
  3. Thread 4 to 5 shrimp per skewer, piercing through the tail and thickest part of the body.
  4. Brush the shrimp generously with the garlic butter mixture.
  5. Place the skewers on the preheated grill and cook for 2-3 minutes per side, brushing with more garlic butter halfway through grilling, until shrimp turn pink and opaque with slight char marks.
  6. Remove from grill and brush once more with garlic butter. Sprinkle with chopped fresh parsley if desired.
  7. Serve immediately with extra lemon wedges on the side.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. Avoid overcooking shrimp to prevent rubbery texture. Brush shrimp often with garlic butter for juiciness and flavor. Fresh shrimp preferred but thawed frozen shrimp works well. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently.
