Juicy beef is seared and glazed with a sticky-sweet garlic butter honey BBQ sauce, then tucked into warm tortillas and topped with crisp veggies and cheese. This easy summer dinner is packed with bold flavor and comes together in under 30 minutes.

Ingredients

Scale
  • 1 lb beef steak or ground beef (chuck steak preferred)
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp unsalted butter (softened; use plant-based butter for dairy-free)
  • 3 garlic cloves, minced
  • 1/4 cup honey
  • 1/2 cup BBQ sauce (smoky or sweet)
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder (optional)
  • 8 small flour or corn tortillas (warmed)
  • Shredded lettuce (iceberg or romaine)
  • Fresh cilantro, chopped
  • Finely diced red onions or pickled onions
  • Crumbled queso fresco or shredded cheddar (optional, skip for dairy-free)
  • Lime wedges, for serving

Instructions

  1. Pat the beef dry with paper towels. If using steak, slice into thin strips about 1/4 inch thick. If using ground beef, break apart gently but don’t overwork.
  2. Season beef with salt and pepper on all sides. Let sit at room temperature for 10 minutes.
  3. In a bowl, blend together softened butter and minced garlic until smooth and fragrant. Add honey, BBQ sauce, smoked paprika, and chili powder (if using). Mix well.
  4. Heat olive oil in a large skillet over medium-high heat. Add beef strips or ground beef in a single layer. Sear for 2-3 minutes per side until browned and just cooked through. Remove excess fat if needed.
  5. Reduce heat to medium. Add the garlic butter honey BBQ sauce to the skillet with cooked beef. Toss gently to coat every piece. Simmer for 3-5 minutes until sauce thickens and becomes glossy.
  6. Wrap tortillas in a damp towel and microwave for 30 seconds, or toast directly on a hot skillet for 20 seconds per side until soft and pliable.
  7. Lay out warm tortillas. Spoon glazed beef into the center (about 1/4 cup per taco). Top with shredded lettuce, diced onions, cilantro, cheese, and a squeeze of lime juice.
  8. Serve immediately while hot and fresh.

Notes

For gluten-free, use corn tortillas and check BBQ sauce ingredients. For dairy-free, use plant-based butter and skip cheese. Prep toppings while beef cooks to save time. Double the sauce for extra drizzling. If beef is tough, slice thinner or avoid overcooking. Keep beef warm in a low oven if serving a crowd.
