  • 1 cup (200g) uncooked orzo pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 8 oz (225g) cooked sausage, sliced or crumbled
  • 2 cups (480ml) low-sodium chicken broth
  • ½ cup (120ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Mince the garlic, slice the sausage, and chop the parsley. Measure out your orzo, broth, and cream for easy cooking.
  2. Heat a large skillet over medium heat. Add a drizzle of olive oil and cook the sliced sausage until browned, about 3-4 minutes. Remove and set aside.
  3. In the same pan, lower the heat slightly and melt the butter. Add the minced garlic and sauté for 1 minute, stirring constantly to prevent burning.
  4. Stir in the uncooked orzo and toast it in the garlic butter for 1-2 minutes.
  5. Slowly add the chicken broth. Bring to a simmer and cook the orzo, stirring occasionally, for 8-10 minutes or until tender and most of the liquid is absorbed.
  6. Reduce the heat to low and stir in the heavy cream. Let it simmer for 2 minutes to create a luscious sauce.
  7. Return the cooked sausage to the pan and toss to combine. Let it heat through for 1-2 minutes.
  8. Add salt, pepper, and Parmesan cheese to taste. Stir in the parsley just before serving.

Notes

Toast the orzo in butter for a nutty flavor. Adjust the liquid if the orzo absorbs too much broth. Use fresh Parmesan for richer taste.
