  • 1 package (3 oz) fresh or instant ramen noodles (discard seasoning packet)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 2 stalks green onions, sliced thinly
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Red pepper flakes, a pinch or two (optional)
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley or cilantro, chopped for garnish (optional)

Instructions

  1. Peel and devein the shrimp if not already done. Pat them dry thoroughly with paper towels. Mince the garlic finely, slice the green onions thinly, and set aside. Bring a pot of salted water to a boil for the noodles.
  2. Add ramen noodles to boiling water and cook according to package instructions (usually 3-4 minutes). Drain and set aside. Optionally rinse under cold water briefly to stop cooking and prevent sticking.
  3. In a medium skillet over medium heat, melt 3 tablespoons of unsalted butter. Once melted and bubbling, add minced garlic. Stir constantly for about 1 minute until fragrant but not browned.
  4. Push the garlic butter sauce to the side of the pan and add the shrimp in a single layer. Season lightly with salt and pepper. Cook for 2-3 minutes per side, turning once, until shrimp are pink and opaque. Stir the garlic into the shrimp as they cook to coat them well.
  5. Drizzle 1 tablespoon soy sauce, 1 teaspoon sesame oil, and red pepper flakes (if using) over the shrimp and garlic butter. Toss gently to combine and warm through for 30 seconds.
  6. Add the cooked ramen noodles directly to the skillet or transfer everything to a mixing bowl. Toss noodles with the shrimp and garlic butter sauce until well coated. Squeeze fresh lemon juice over the top and sprinkle sliced green onions.
  7. Taste and adjust salt and pepper as needed. Garnish with chopped parsley or cilantro if desired. Serve immediately.

Dry shrimp thoroughly before cooking to ensure a good sear. Avoid burning garlic by stirring constantly and keeping heat moderate. Do not overcrowd the pan when cooking shrimp to prevent steaming. Toss noodles gently to avoid mushiness. Adjust soy sauce and lemon juice to taste for balance.
