  • 2 boneless, skinless chicken breasts (or thighs, cut into bite-sized pieces)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons oyster sauce (or hoisin sauce as a substitute)
  • 1 teaspoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, freshly grated
  • 2 tablespoons vegetable oil
  • 8 ounces egg noodles (or rice noodles/spaghetti as substitutes)
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, broccoli, snap peas)
  • 2 green onions, thinly sliced for garnish
  • Pinch of red chili flakes (optional)

Instructions

  1. Cook the egg noodles according to package instructions. Drain and toss with 1 teaspoon of sesame oil to prevent sticking. Set aside.
  2. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and red chili flakes. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes until fully cooked and golden brown. Remove from skillet and set aside.
  4. Lower the heat slightly and add another tablespoon of vegetable oil. Add minced garlic and grated ginger, cooking for about 30 seconds until fragrant.
  5. Add the chopped vegetables to the skillet and stir-fry for 3-4 minutes until tender but still crisp.
  6. Return the chicken to the skillet along with the cooked noodles. Pour the sauce over the top and toss everything together using tongs. Stir-fry for another 2-3 minutes.
  7. Garnish with thinly sliced green onions and serve immediately. Add extra red chili flakes if desired.
