  • 1 cup (240 ml) plain Greek yogurt (full-fat or 2%)
  • 1 large orange, peeled and sectioned
  • 45 cookies, crushed (shortbread, cinnamon snaps, or chocolate chip)
  • 12 teaspoons honey or maple syrup (optional)
  • 1 teaspoon chia seeds or flaxseeds (optional)
  • A few fresh mint leaves, chopped (optional)

Instructions

  1. Prepare the orange segments by peeling the orange carefully to remove all white pith, then cut along each side of the membranes to release clean segments.
  2. Crush the cookies gently in a ziplock bag using a rolling pin or the bottom of a glass, leaving some bigger chunks for texture.
  3. In a mixing bowl, combine the Greek yogurt with honey or maple syrup and chia or flaxseeds if using. Stir until smooth and glossy.
  4. Spoon the sweetened yogurt into a serving bowl. Arrange the orange segments on top, then sprinkle the crushed cookies over everything.
  5. Scatter chopped fresh mint leaves if desired, and drizzle a little extra honey or fresh orange juice for added sweetness and zing.

Notes

Use ripe, juicy oranges for best flavor. Do not pulverize cookies into dust; keep some chunks for texture. Taste yogurt mixture before assembling and adjust sweetness as needed. Prepare close to serving time to keep cookies crunchy. For dairy-free, use plant-based Greek-style yogurt and dairy-free cookies.
