  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons honey or maple syrup
  • 1 to 1 ½ cups mixed berries (blueberries, sliced strawberries, raspberries, blackberries)
  • 2 tablespoons granola (homemade or store-bought)
  • Optional: chia seeds or flaxseeds
  • Optional: mint leaves for garnish

Instructions

  1. Mix the yogurt base: In a medium bowl, stir 1 cup (240 ml) of Greek yogurt with 1 teaspoon vanilla extract and 1 to 2 tablespoons honey (15-30 ml), adjusting sweetness to your taste.
  2. Prepare the berries: Rinse 1 to 1 ½ cups (150-225 g) mixed berries under cold water and pat dry. Slice larger berries like strawberries into bite-sized pieces.
  3. Layer your parfait: Start with 2 tablespoons (30 g) of granola at the bottom of a glass or jar. Add about ¼ cup (60 ml) of the yogurt mixture, followed by a handful of berries (about ¼ cup or 40 g). Repeat layers until the glass is filled, usually 3 layers total.
  4. Top it off: Finish with a sprinkle of granola, a few berries, and a drizzle of honey (optional). Add a few mint leaves for garnish if desired.
  5. Serve immediately or chill: Cover and refrigerate for up to 4 hours if prepping ahead. Add granola just before eating to maintain crunch.
