  • 1/4 cup melted coconut oil (or unsalted butter, softened)
  • 1/2 teaspoon ground cinnamon
  • Pinch of fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel the peaches if desired and slice into roughly 1/2-inch thick wedges (about 4 cups). Toss the peach slices in a large bowl with lemon juice, maple syrup, cinnamon, vanilla extract, cornstarch, and a pinch of salt. Stir gently to coat evenly.
  3. Transfer the peach mixture to a 9×9-inch baking dish, spreading evenly.
  4. In a medium bowl, combine rolled oats, sliced almonds, almond flour, cinnamon, and salt. Pour in melted coconut oil and maple syrup, stirring until the mixture sticks together in small clumps.
  5. Sprinkle the crumble evenly over the peaches.
  6. Bake uncovered for 40-45 minutes until the topping is golden brown and peach juices are bubbling. If needed, broil for an additional 2-3 minutes to achieve desired crunch, watching closely to avoid burning.
  7. Remove from oven and let cool for about 15 minutes to thicken.
  8. Serve warm, optionally with vanilla Greek yogurt or ice cream.

Notes
