  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 10 ounces (280g) semi-sweet chocolate chips or baking chocolate
  • 1 teaspoon peppermint extract (adjust to taste)
  • 1 tablespoon coconut oil (optional, for a smoother coating)

Instructions

  1. Prepare the dough: In a bowl, whisk together the flour, cocoa powder, and salt. In a separate large bowl, cream the softened butter and sugar until light and fluffy. Mix in the egg and vanilla extract until combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  2. Chill the dough: Wrap the dough in plastic wrap and flatten it into a disk. Chill in the refrigerator for at least 30 minutes.
  3. Roll and cut: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness. Use a cookie cutter to cut out rounds, gently transferring them to the prepared baking sheet.
  4. Bake: Bake the cookies for 8-10 minutes, or until they are firm to the touch. Remove from the oven and let them cool completely on a wire rack.
  5. Melt the chocolate: Using a double boiler or microwave, melt the semi-sweet chocolate chips. Stir in the peppermint extract and coconut oil (if using). Adjust the peppermint extract to taste.
  6. Dip the cookies: Once the cookies are cool, dip each one into the melted chocolate, ensuring both sides are coated. Use a fork to lift the cookie out and tap off any excess chocolate. Place the coated cookies on a parchment-lined baking sheet or wire rack.
  7. Let them set: Allow the chocolate coating to set completely, either at room temperature or in the fridge for faster results.

Notes

Chill the dough for easy rolling and cutting. Sprinkle cocoa powder instead of flour to prevent sticking while rolling. Adjust peppermint extract to taste, but avoid overpowering the flavor.
