  • 1 tsp kosher salt (or sea salt)
  • 1/2 tsp black pepper, freshly ground
  • 1/2 tsp paprika (smoked or sweet)
  • 1 tbsp olive oil (or avocado oil)
  • 3 tbsp unsalted butter (plus 1 tbsp for finishing, divided)
  • 4 large garlic cloves, minced (about 1 1/2 tbsp)
  • 2 1/2 tbsp honey
  • 1 tbsp low-sodium soy sauce (optional)
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Pat steak cubes dry with paper towels. Season evenly with salt, pepper, and paprika. Toss to coat and let sit at room temperature for 10 minutes.
  2. Heat a large cast iron skillet over medium-high heat. Add olive oil and 1 tbsp butter. Wait until oil shimmers and butter is foaming (about 2 minutes).
  3. Add steak cubes in a single layer (work in batches if needed). Sear for 2 minutes on one side, flip, and cook another 1-2 minutes until browned but still juicy. Remove steak bites to a plate.
  4. Lower heat to medium. Add remaining 2 tbsp butter and minced garlic. Stir for 30 seconds until fragrant.
  5. Pour in honey and soy sauce (if using). Stir for 1 minute until bubbly and thickened. If sauce is too thick, add 1 tbsp water; if too thin, simmer another 30 seconds.
  6. Return steak bites and any juices to the pan. Toss in sauce until evenly coated (about 1 minute). Sprinkle with chopped parsley.
  7. Plate steak bites, spoon over extra sauce, and garnish with more parsley if desired. Serve immediately.

Notes

For best results, use high heat and avoid overcrowding the pan. Pat steak dry before searing for a crisp crust. If making ahead, reheat gently to avoid overcooking. For a gluten-free version, use tamari or coconut aminos instead of soy sauce. Adjust honey and garlic to taste, and add chili flakes for heat if desired.
