  • pounds beef sirloin or stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth (low sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons all-purpose flour (or cornstarch/gluten-free flour)
  • Salt and black pepper to taste
  • 1 teaspoon fresh thyme, chopped (or dried thyme)
  • 2 tablespoons butter
  • ¼ cup heavy cream or half-and-half (optional but recommended)

Instructions

  1. Pat the beef tips dry with paper towels. Chop the onion finely and mince the garlic.
  2. Set the Instant Pot to sauté. Add olive oil and heat until shimmering. Brown beef tips in batches, about 3-4 minutes per batch. Remove and set aside.
  3. In the same pot, sauté chopped onion until translucent and soft, about 4-5 minutes. Add garlic and cook for another minute.
  4. Deglaze the pot with a splash of beef broth, scraping up browned bits with a wooden spoon.
  5. Return beef to the pot. Add remaining beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir gently to combine.
  6. Seal the Instant Pot lid and cook on high pressure for 15 minutes. Allow about 10 minutes for pressure to build.
  7. Quick release the pressure carefully. Open the lid and check that beef is fork-tender.
  8. Turn pot to sauté. Mix flour with a few tablespoons of cold water to form a slurry. Slowly whisk slurry into pot to avoid lumps. Cook 3-5 minutes until gravy thickens.
  9. Stir in butter and cream. Adjust seasoning as needed.
  10. Serve beef tips and gravy over mashed potatoes, egg noodles, or rice.
