Invigorating Watermelon Mojito Popsicles

These watermelon mojito popsicles are a refreshing summer treat combining juicy watermelon, zesty lime, fresh mint, and an optional splash of rum for a cool, vibrant flavor perfect for hot days.

Ingredients

  • 4 cups (600g) watermelon cubes, seeds removed
  • 1/4 cup (60ml) fresh lime juice
  • 1012 fresh mint leaves, plus extra for garnish
  • 2 tablespoons granulated sugar (or honey/agave syrup as substitute)
  • 1/2 cup (120ml) water
  • 1/4 cup (60ml) white rum (optional)
  • 1 teaspoon lime zest

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into cubes and remove any seeds.
  2. Add watermelon cubes, fresh lime juice, mint leaves, sugar, water, and lime zest into a high-speed blender. Blend until smooth, about 1-2 minutes.
  3. Optional: Pour the blended mixture through a fine mesh sieve to remove pulp and mint bits for a smoother texture.
  4. Stir in white rum if using.
  5. Pour the mixture evenly into popsicle molds, leaving space at the top for expansion. Insert sticks.
  6. Freeze molds upright for at least 6 hours or overnight until solid.
  7. To unmold, dip molds briefly in warm water for 10-15 seconds and gently pull out the popsicles. Serve immediately with fresh mint garnish if desired.

Notes

For a non-alcoholic version, omit rum and add a splash of sparkling water before freezing. Use ripe watermelon for best flavor. Lightly bruise mint leaves before blending to release oils without bitterness. Freeze overnight for best texture. Dip molds in warm water before unmolding for easy release.
