Irresistible Bacon Wrapped Dates with Creamy Goat Cheese

A quick and easy appetizer combining smoky bacon, sweet Medjool dates, and tangy creamy goat cheese, perfect for any occasion and crowd-pleasing.

  • 16 large Medjool dates, pitted
  • 4 oz (113 g) creamy goat cheese
  • 8 slices thick-cut bacon
  • Toothpicks (optional)
  • Optional add-ins: chopped toasted almonds or pecans, honey drizzle, cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. If dates are not pitted, slice lengthwise on one side and remove the pit carefully.
  3. Fill each date with about 1 teaspoon (5 g) of creamy goat cheese. Optionally, sprinkle chopped toasted nuts inside the cheese.
  4. Cut each bacon slice in half crosswise to make about 16 pieces.
  5. Wrap one piece of bacon around each stuffed date and secure with a toothpick if needed.
  6. Place the wrapped dates seam-side down on the baking sheet, spaced evenly.
  7. Bake for 20-25 minutes, turning once halfway through, until bacon is crispy and cheese is melty.
  8. Optionally drizzle with honey and sprinkle cracked black pepper before serving.
  9. Let the dates cool for 5 minutes before serving.

Notes

Use thick-cut bacon for best crispness. Turn dates halfway through baking for even cooking. Let rest 5 minutes before serving to set cheese. Chilling stuffed dates before wrapping helps hold shape. Avoid microwaving leftovers to keep bacon crispy.
