  • 12 Bacon slices, cut in half (use thick-cut for extra crispiness)
  • 1/2 cup (120 ml) BBQ sauce (your favorite brand or homemade)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground black pepper
  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with foil for easy cleanup, then place a wire rack on top if you have one.
  2. In a small bowl, mix together 1/2 cup BBQ sauce, 1 tablespoon brown sugar, 1/2 teaspoon black pepper, and optional cayenne or smoked paprika. Stir until sugar dissolves and set aside.
  3. Cut bacon slices in half.
  4. Wrap each little smokie with a half slice of bacon. Secure with a toothpick to hold it tight.
  5. Arrange the wrapped smokies on the wire rack or directly on the foil-lined pan, spaced slightly apart.
  6. Bake for 10 minutes at 400°F (200°C).
  7. Remove the pan from the oven and brush each smokie generously with the BBQ glaze.
  8. Return to the oven and bake for another 10-12 minutes until bacon is crisp and glaze is sticky and glossy.
  9. Optional: Broil for 1-2 minutes at the end for extra caramelization, watching closely to avoid burning.
