  • 2 ripe bananas
  • 1 cup (150g) fresh blueberries
  • 2 eggs
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) Greek yogurt
  • 1/4 cup (60ml) honey
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with muffin liners.
  2. In a large bowl, combine rolled oats, baking powder, cinnamon, and a pinch of salt.
  3. In a separate bowl, mash ripe bananas until smooth. Add eggs, milk, Greek yogurt, honey, and vanilla extract. Whisk until well combined.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spatula until fully incorporated.
  5. Fold fresh blueberries into the batter, being careful not to crush them.
  6. Divide the mixture evenly among the muffin tin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Let the oatmeal cups cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
