Instructions

  1. Place 1 cup (230g) unsalted butter in a medium saucepan over medium heat. Stir frequently as the butter melts and foams. Watch for the color to change to a golden brown with small brown specks (about 5-7 minutes). Remove from heat immediately and let cool slightly.
  2. In a large bowl, combine 3/4 cup (150g) granulated sugar and 1 cup (220g) packed brown sugar. Pour in the warm browned butter and whisk until smooth and glossy, about 2 minutes.
  3. Add 2 large eggs one at a time, beating well after each. Stir in 2 teaspoons pure vanilla extract.
  4. Sprinkle 2 teaspoons instant espresso powder over the wet mixture and stir thoroughly to dissolve.
  5. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula until just combined. Avoid overmixing.
  7. Fold in 1 1/2 cups (270g) dark chocolate chips gently.
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  9. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  10. Scoop dough using a tablespoon or cookie scoop, spacing cookies about 2 inches apart. Bake for 10-12 minutes or until edges are golden but centers remain soft.
  11. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
