  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup small pasta shapes (optional)
  • Fresh basil for garnish

Instructions

  1. Season chicken breasts lightly with salt and pepper and cook in a skillet over medium heat until fully cooked (about 6-7 minutes per side). Let cool, then shred with two forks.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, stirring occasionally until softened and fragrant (about 4-5 minutes).
  3. Pour in chicken broth and crushed tomatoes. Stir to combine, and bring the mixture to a gentle simmer.
  4. Sprinkle in Italian seasoning, salt, and pepper. Taste and adjust as needed.
  5. Stir shredded chicken into the pot and let it simmer for 10 minutes to absorb the flavors.
  6. If including pasta, boil it separately according to package instructions, then add it to the soup before serving.
  7. Stir in freshly grated Parmesan cheese until melted and creamy.
  8. Ladle the soup into bowls, top with fresh basil, and serve.

Notes

Use freshly grated Parmesan for better melting and flavor. Cook pasta separately to prevent it from absorbing too much liquid. This soup tastes even better the next day as the flavors meld together.
