  • 12 ounces pasta (penne, rotini, or egg noodles)
  • 1 cup frozen mixed vegetables (peas, carrots, green beans, and corn)
  • 3 cups chicken broth (low sodium preferred)
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Salt, pepper, garlic powder, and onion powder (adjust to taste)
  • Fresh parsley or grated Parmesan for garnish (optional)

Instructions

  1. In your large pot, melt the butter over medium heat. Add the flour and whisk until smooth, cooking for about 1-2 minutes.
  2. Gradually pour in the chicken broth while whisking continuously to avoid lumps. Let it simmer for 2-3 minutes until slightly thickened.
  3. Stir in the heavy cream, garlic powder, and onion powder. Season with salt and pepper to taste.
  4. Toss in your pasta and mix well to coat. Cover and cook for about 10 minutes, stirring occasionally to prevent sticking.
  5. Stir in the shredded chicken and frozen mixed vegetables. Cook for another 5-7 minutes, or until the pasta is tender and the sauce is creamy.
