Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon (ground)
  • 1/4 tsp nutmeg (optional)
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1/3 cup (80ml) milk, room temperature
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • Powdered sugar for dusting (optional)
  • Caramel sauce drizzle (optional)
  • Chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper. Grease the sides for easy removal.
  2. Peel, core, and dice the apples into small chunks. Toss them with brown sugar and cinnamon in a bowl. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  4. In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients to avoid overmixing.
  7. Gently fold the diced apples into the batter using a spatula. Ensure even distribution.
  8. Pour the batter into the prepared pan, smoothing the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Dust with powdered sugar, drizzle with caramel sauce, or sprinkle chopped nuts on top before serving (optional).

Notes

[‘Don’t overmix the batter to avoid a dense cake.’, ‘Use tart apples like Granny Smith or Honeycrisp for balanced flavor.’, ‘Ensure eggs, butter, and milk are at room temperature for a smoother batter.’, ‘Test for doneness with a toothpick—it should come out clean or with a few crumbs.’, ‘Adjust spices to taste; add more cinnamon or a pinch of cloves for extra warmth.’]
