  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 1 cup (240ml) pumpkin puree, canned or fresh
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping: ¼ cup (50g) granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with liners or grease it well.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
  3. In a large bowl, whisk granulated sugar and brown sugar until combined. Add pumpkin puree, eggs, vegetable oil, and vanilla extract. Mix well until smooth and creamy.
  4. Gradually fold the dry mixture into the wet ingredients using a spatula. Stir gently until just combined; do not overmix.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full.
  6. Mix granulated sugar and ground cinnamon for the topping in a small bowl. Sprinkle generously over each muffin.
  7. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean and the tops spring back lightly to the touch.
  8. Remove from oven and let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature eggs and pumpkin puree for best batter consistency. Avoid overmixing to prevent tough muffins. Tent with foil if muffins brown too quickly. Muffins taste better after a day as flavors meld. Store in airtight container up to 3 days or freeze up to 3 months.
