  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 ½ cups sweetened shredded coconut
  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together sweetened condensed milk, vanilla extract, and eggs until smooth.
  3. In a separate bowl, mix shredded coconut, all-purpose flour, and granulated sugar. Stir well to ensure there are no lumps.
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully combined. The mixture should be sticky but not runny.
  5. Using a tablespoon or small cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the tops are lightly caramelized.
  7. Remove the baking sheet from the oven and let the coconut chews cool for 5-10 minutes before transferring them to a cooling rack.
