Irresistible Cranberry Brie Bites

These cranberry brie bites in homemade phyllo cups combine flaky, buttery crusts with creamy brie and tangy cranberry topping, perfect for festive gatherings or quick snacks.

Ingredients

  • Phyllo dough sheets (fresh or thawed from frozen)
  • Unsalted butter, melted
  • 8 ounces (about 225 grams) brie cheese, rind removed
  • ½ cup (125 ml) cranberry sauce or jam
  • Zest of one medium orange
  • ¼ cup (30 grams) chopped pecans or walnuts (optional)
  • Honey or maple syrup (optional drizzle)
  • Fresh thyme leaves (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lay one sheet of phyllo on a clean work surface and brush it lightly with melted butter. Place another sheet on top and brush again. Repeat layering 3–4 sheets total, keeping remaining sheets covered with a damp towel.
  3. Cut the layered phyllo into 3×3 inch (7.5×7.5 cm) squares.
  4. Gently press each square into a muffin tin cup to form a bowl shape. Brush the insides with more melted butter.
  5. Bake the phyllo cups for 8–10 minutes until crisp and golden brown.
  6. While baking, slice the brie into ½-inch (1.5 cm) cubes. Zest the orange and combine with cranberry sauce and nuts if using.
  7. Remove phyllo cups from oven and let cool slightly. Place a piece of brie in each cup, then top with cranberry-orange mixture.
  8. Return filled cups to oven and bake for 5–7 minutes until brie softens and starts to melt.
  9. Remove from oven, drizzle with honey or maple syrup if desired, and garnish with fresh thyme leaves.

Notes

Keep unused phyllo sheets covered with a damp towel to prevent drying. Brush each phyllo layer with melted butter for best crispness. Pre-bake phyllo cups before filling to avoid sogginess. If brie is too soft to slice, chill for 10 minutes first. Reheat leftovers in a 300°F oven for 5–7 minutes to maintain crispness.
