Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, cream the softened butter and sugar together until light and fluffy. Gradually add the flour and salt, mixing until the dough comes together. Press the dough evenly into the bottom of the prepared pan. Bake for 15-20 minutes, or until lightly golden. Let it cool while preparing the filling.
  3. Whisk together the eggs and sugar until smooth. Add the lemon juice, lemon zest, and flour, mixing until fully combined. Pour the filling over the cooled crust.
  4. Return the pan to the oven and bake for 20-25 minutes, or until the filling is set and no longer jiggles. Remove from the oven and let it cool completely.
  5. In a small saucepan, combine the cranberries, sugar, and water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens into a jam-like consistency (about 10 minutes). Let it cool slightly.
