  • 2 cans black beans, drained and rinsed
  • 1 can (14 ounces) diced tomatoes (fire-roasted recommended)
  • 4 cups low-sodium vegetable broth
  • 1 onion, chopped (yellow or white)
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon olive oil (optional, for sautéing)
  • Optional toppings: avocado slices, sour cream or dairy-free alternative, shredded cheese, cilantro, lime wedges

Instructions

  1. Peel and dice the sweet potatoes into bite-sized cubes. Chop the onion, garlic, and bell peppers.
  2. Optional: Heat olive oil in a skillet over medium heat. Sauté the chopped onions and garlic until softened and fragrant, about 3-4 minutes.
  3. Add the sweet potatoes, black beans, diced tomatoes, vegetable broth, bell peppers, and sautéed onions and garlic to the crock pot.
  4. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Adjust seasoning to taste.
  5. Set the crock pot to low and cook for 6-8 hours, or high for 3-4 hours, until the sweet potatoes are fork-tender and flavors are well combined.
  6. Taste the chili and adjust seasoning with salt, pepper, or spices as needed. If too thick, add more vegetable broth.
  7. Serve hot in bowls and garnish with your favorite toppings like avocado slices, cilantro, or sour cream.
