Irresistible Crockpot Beef Stew Recipe Easy Tender Vegetable Dinner

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, peeled and sliced into thick rounds
  • 3 medium russet or Yukon gold potatoes, peeled and cubed
  • 3 celery stalks, chopped
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth (low-sodium recommended)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1/4 cup all-purpose flour (30 g), for dredging the beef
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil for browning the beef

Instructions

  1. Pat the beef cubes dry with paper towels and season generously with salt and pepper.
  2. Place the flour in a shallow bowl and toss the beef cubes until lightly coated.
  3. Heat 2 tablespoons of oil in a large skillet over medium-high heat. In batches, sear the beef cubes until browned on all sides, about 3-4 minutes per batch. Transfer browned beef to the crockpot.
  4. In the same skillet, add diced onion and celery. Cook for about 4 minutes until softened and fragrant. Add minced garlic and cook for another 30 seconds. Scrape any browned bits from the bottom of the pan into the crockpot.
  5. Place carrots and potatoes on top of the beef in the crockpot.
  6. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the meat and vegetables.
  7. Tuck in the bay leaves.
  8. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender and vegetables are soft but not mushy.
  9. If stew is thinner than desired, mix 1 tablespoon of flour or cornstarch with cold water and stir into stew. Cook uncovered on high for 15-20 minutes to thicken.
  10. Taste and adjust seasoning if needed. Remove bay leaves and serve warm.

Notes

Browning the beef before slow cooking adds rich, caramelized flavor. Keep the lid on the crockpot during cooking to maintain heat and moisture. For gluten-free, substitute flour with cornstarch or arrowroot powder. Adjust vegetables and herbs to taste. If stew is watery, thicken with a slurry of flour or cornstarch mixed with cold water and cook uncovered for 15-20 minutes.
