  • 45 lbs pork shoulder (Boston butt)
  • 12 oz root beer
  • 1 cup BBQ sauce
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Trim some of the excess fat from the pork shoulder, leaving enough to keep the meat moist.
  2. In a mixing bowl, combine root beer, BBQ sauce, brown sugar, apple cider vinegar, garlic powder, onion powder, smoked paprika, chili powder, salt, black pepper, and optional red pepper flakes. Stir until smooth and sugar dissolves.
  3. Place the trimmed pork shoulder in the slow cooker. Pour the root beer BBQ sauce mixture evenly over the pork, coating it well.
  4. Cover and cook on LOW for 8 to 9 hours until the pork is tender enough to shred easily. Avoid lifting the lid during cooking.
  5. Remove the pork and shred it using two forks or tongs, discarding any large pieces of fat.
  6. Return the shredded pork to the slow cooker and stir it into the sauce. Adjust seasoning if needed.
  7. Serve hot on buns, over rice, or with your favorite sides.

Notes

Keep the slow cooker lid sealed during cooking to trap moisture. If sauce is too thin after cooking, remove pork and simmer sauce on stove to thicken. Let pork rest before shredding. For extra char flavor, broil shredded pork briefly before serving. Adjust sweetness with apple cider vinegar or lemon juice if needed.
