  • 4 cups chicken broth

  • 2 cups egg noodles
  • 1 can (15 oz) pumpkin puree
  • 3 cups vegetable broth
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup unsweetened coconut milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Optional: toasted pumpkin seeds for garnish
  • 1 lb beef stew meat, cubed
  • 5 cups beef broth
  • 1 cup pearl barley
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Place the chicken, broth, water, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper into the crockpot. Set the crockpot to low and cook for 6-8 hours. About 30 minutes before serving, stir in the egg noodles and let them cook until tender. Adjust seasoning as needed and serve hot.
  2. Add the pumpkin puree, vegetable broth, onion, garlic, cinnamon, nutmeg, salt, and pepper to your crockpot. Cook on low for 6-7 hours. Use an immersion blender to puree the soup until smooth. Stir in the coconut milk or cream and cook for an additional 30 minutes. Serve topped with toasted pumpkin seeds for added crunch.
  3. Layer the beef, broth, barley, carrots, celery, onion, garlic, rosemary, thyme, salt, and pepper in the crockpot. Cook on low for 7-8 hours or until beef is tender and barley is cooked. Skim off any excess fat if needed before serving. Ladle into bowls and enjoy with a slice of crusty bread.
