  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes, or until they float to the top. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  3. Add the spinach to the skillet and cook until wilted, about 2 minutes. If using frozen spinach, make sure it’s fully drained before adding.
  4. Pour in the heavy cream and stir gently to combine. Season with salt and pepper to taste. Let the sauce simmer for 2-3 minutes until slightly thickened.
  5. Add the cooked gnocchi to the skillet and toss to coat evenly in the sauce.
  6. Sprinkle feta cheese over the gnocchi and stir gently. Let it cook for 1-2 minutes to allow the flavors to meld.
  7. Optional: Top with grated Parmesan cheese for extra creaminess.
