Irresistible Grilled Pineapple with Rum Glaze

A quick and easy grilled pineapple recipe with a sweet, sticky rum glaze perfect for summer cookouts. This tropical treat offers a perfect balance of caramelized fruit and boozy sweetness.

  • 1 medium fresh pineapple, peeled, cored, and cut into 1-inch thick rings or wedges
  • 1/4 cup (60 ml) dark rum
  • 1/3 cup (65 g) packed brown sugar
  • 2 tablespoons (28 g) unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1 tablespoon fresh lime juice
  • Optional: chopped fresh mint or toasted coconut for garnish

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing into 1-inch thick rings or wedges. Set aside.
  2. In a medium mixing bowl, whisk together dark rum, brown sugar, melted unsalted butter, ground cinnamon, vanilla extract, salt, and fresh lime juice until mostly dissolved and smooth.
  3. Preheat the grill to medium-high heat (375°F to 400°F). If using a grill pan indoors, heat on medium-high until hot but not smoking.
  4. Place pineapple slices on the hot grill grates and cook for 3-4 minutes per side without moving them too much to develop grill marks.
  5. During the last minute of grilling each side, baste the pineapple generously with the rum glaze using a basting brush. Watch carefully to avoid burning as the glaze bubbles and caramelizes.
  6. Once grilled with nice char marks and sticky glaze, transfer pineapple to a platter. Optionally, brush with one last coat of glaze.
  7. Garnish with chopped fresh mint or toasted coconut if desired. Serve warm or at room temperature.

Notes

If the glaze starts to burn, move pineapple to a cooler spot or reduce heat. Apply glaze only during the last minute of grilling each side to prevent burning. For a non-alcoholic version, substitute rum with pineapple juice or apple cider vinegar with vanilla extract. Use coconut oil instead of butter for a dairy-free option.
