  • 1 ½ cups fresh corn kernels (or frozen, thawed)
  • 12 jalapeños, finely diced
  • ¾ cup cheddar cheese, shredded
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 2 large eggs, beaten
  • ¼ cup milk (dairy or non-dairy)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (optional)
  • Vegetable oil for frying

Instructions

  1. Dice the jalapeños finely and measure out all the ingredients. If using fresh corn, slice the kernels off the cob.
  2. In a large bowl, whisk together the eggs and milk. Add the flour, cornmeal, baking powder, salt, and pepper, mixing until smooth.
  3. Fold in the corn, jalapeños, and shredded cheese. Stir until evenly combined—your batter should be thick and scoopable.
  4. Heat about ½ inch of vegetable oil in your skillet over medium heat. It’s ready when a drop of batter sizzles immediately.
  5. Scoop 2 tablespoons of batter for each fritter into the hot oil. Flatten slightly with the back of the spoon. Cook for 2-3 minutes per side, or until golden brown and crispy.
  6. Use a slotted spoon or tongs to transfer the fritters to a plate lined with paper towels.
  7. Plate the fritters and serve immediately with your favorite dipping sauce.

Keep the oil temperature steady to ensure crispy fritters. Adjust spice levels by removing jalapeño seeds if desired.
