These keto onion rings are crispy, flavorful, and low-carb, making them the perfect snack or appetizer for any occasion.

Ingredients

Scale
  • 2 large sweet onions (e.g., Vidalia), peeled and sliced into 1/4-inch thick rings
  • 1 cup almond flour
  • 1 cup crushed pork rinds
  • 2 large eggs, lightly beaten
  • 2 tablespoons heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Avocado oil for brushing or frying

Instructions

  1. Preheat your oven to 425°F (220°C) or air fryer to 375°F (190°C).
  2. Peel and slice the onions into 1/4-inch thick rings. Separate the rings gently and set aside.
  3. In one bowl, whisk together the eggs and heavy cream. In another bowl, mix almond flour, crushed pork rinds, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper.
  4. Dip each onion ring into the egg mixture, allowing any excess to drip off. Then coat it thoroughly in the dry mixture, pressing gently to ensure it sticks. Place the coated rings on a wire rack or baking sheet lined with parchment paper.
  5. For oven-baked rings, lightly brush them with avocado oil and bake for 15-20 minutes, flipping halfway through. For air-fried rings, spray with cooking oil and fry for 8-10 minutes, checking for golden, crispy perfection.
  6. Let the onion rings cool slightly on a wire rack to maintain their crispiness before serving. Enjoy warm with your favorite dipping sauce!

Notes

[‘If your batter isn’t sticking well, try chilling the coated onion rings for 10 minutes before cooking.’, ‘Double coat the onion rings for extra crunch.’, ‘Don’t overcrowd the baking sheet or air fryer to ensure even cooking.’, ‘Use a wire rack to prevent soggy bottoms and ensure maximum crunch.’]
