  • Optional: 1/4 cup chocolate chips, chopped nuts, or dried cranberries
  • Coating options: crushed graham crackers, shredded coconut, powdered sugar, or melted chocolate

Instructions

  1. In a large mixing bowl, combine canned pumpkin, rolled oats, almond butter, maple syrup, cinnamon, nutmeg, and salt. Stir until evenly combined.
  2. Add optional mix-ins like chocolate chips, chopped nuts, or dried cranberries. Stir gently to distribute.
  3. Cover the bowl with plastic wrap and refrigerate for 15-20 minutes to firm up the mixture.
  4. Scoop out about a tablespoon of the mixture and roll it into a ball with your hands. Place each ball on a parchment-lined baking sheet.
  5. Roll each ball in your preferred coating—crushed graham crackers, shredded coconut, powdered sugar, or melted chocolate. If using melted chocolate, let the balls set on the parchment paper until the coating hardens.
  6. Return the coated pumpkin balls to the refrigerator for at least 10 minutes to firm up before serving.

Notes
