Ingredients

Scale
  • 1 cup (226g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 cup (85g) unsweetened cocoa powder (Dutch-process preferred)
  • ½ tsp salt
  • 8 oz (227g) cream cheese, softened
  • ½ cup (120g) canned pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • ½ cup (100g) granulated sugar
  • 1 tsp pumpkin pie spice (or mix of cinnamon, nutmeg, and cloves)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and 2 cups sugar until smooth and glossy, about 1-2 minutes. Add eggs one at a time, beating well after each addition. Stir in 1 tsp vanilla extract.
  3. Sift together the flour, cocoa powder, and salt in a separate bowl. Gradually fold the dry ingredients into the wet mixture using a rubber spatula, being gentle to keep the batter fudgy.
  4. In another bowl, beat the softened cream cheese with ½ cup sugar until smooth. Add pumpkin puree, egg, pumpkin pie spice, and vanilla extract. Mix until just combined and creamy.
  5. Pour half of the brownie batter into the prepared pan and spread evenly. Dollop half of the pumpkin cream cheese mixture over the batter in spoonfuls. Repeat with remaining brownie batter and pumpkin mixture.
  6. Use a toothpick or skewer to gently swirl the two mixtures together in a figure-eight motion, creating a marbled effect without overmixing.
  7. Bake for 35-40 minutes. Check doneness by inserting a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  8. Let the brownies cool completely in the pan on a wire rack for at least 1 hour before slicing to allow the cream cheese to set and the texture to firm up.

Notes

Softened cream cheese is key for smooth swirls. Do not overmix the batter to keep brownies fudgy. Let brownies cool completely before slicing to prevent crumbling. Use parchment paper for easy removal. For dairy-free, substitute vegan butter and cream cheese. For gluten-free, substitute all-purpose flour with gluten-free baking flour blend.
