  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin spice blend
  • 1 cup (240ml) pumpkin puree
  • 1/2 cup (100g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1/2 cup (120ml) vegetable oil
  • 1/4 cup (60ml) milk
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice blend. Set aside.
  3. In a separate bowl, whisk pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula. Avoid overmixing.
  5. If desired, fold in chopped nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan, smoothing the top with your spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Start checking at the 50-minute mark.
  8. Let the bread cool in the pan for about 10 minutes, then transfer it to a cooling rack to cool completely.
