Irresistible Raspberry Bars

These raspberry bars feature a buttery crumble, tart raspberry filling, and a sweet aroma, making them a perfect dessert for any occasion.

  • 2 cups (240 g) all-purpose flour
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) packed brown sugar
  • 1/2 teaspoon salt
  • 1 cup (100 g) rolled oats
  • 1 cup (225 g) cold, cubed unsalted butter
  • 1 1/2 cups (380 g) raspberry preserves
  • 1 teaspoon vanilla extract
  • Optional: Lemon zest
  • Optional: 1/2 cup (60 g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch baking dish with parchment paper for easy removal.
  2. In a large bowl, combine all-purpose flour, granulated sugar, brown sugar, salt, and rolled oats.
  3. Add cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter, fork, or your fingers to work the butter into the mixture until it resembles coarse crumbs.
  4. Reserve about 1 1/2 cups of the crumble mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form the crust.
  5. Spread raspberry preserves evenly over the crust. Optionally, sprinkle some lemon zest over the preserves for extra brightness.
  6. Sprinkle the reserved crumble mixture evenly over the raspberry layer. Optionally, add chopped nuts on top for extra texture.
  7. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Remove the pan from the oven and let the bars cool completely in the pan. Lift the parchment paper to remove the bars, then slice into squares or rectangles.
