A quick and easy holiday side dish featuring roasted Brussels sprouts with crispy bacon and a sweet maple glaze, perfect for festive dinners and crowd-pleasing meals.

  • 1.5 pounds Brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon, cut into 1-inch pieces
  • 2 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim off the tough stem ends of the Brussels sprouts and slice each sprout in half lengthwise. Quarter larger sprouts for even cooking.
  3. Cut the bacon into bite-sized 1-inch strips.
  4. In a large mixing bowl, toss Brussels sprouts with olive oil, salt, pepper, garlic powder, and red pepper flakes if using until lightly coated.
  5. Spread the sprouts in a single layer on a rimmed baking sheet. Scatter the bacon pieces evenly over the top.
  6. Roast in the oven for 20 minutes, flipping the sprouts and bacon halfway through (around 10 minutes) for even browning.
  7. Remove the baking sheet briefly and drizzle maple syrup over the sprouts and bacon. Toss gently to coat.
  8. Return to the oven and roast for an additional 5-10 minutes until sprouts are tender inside, crispy outside, and bacon is caramelized.
  9. Check seasoning and adjust salt or pepper if needed. Serve warm straight from the pan.

Notes

Do not overcrowd the pan to avoid steaming the sprouts. Use high heat (425°F) for crispy, caramelized edges. Flip halfway through roasting for even browning. Add maple syrup in the last 5-10 minutes to prevent burning. Thick-cut bacon crisps better. Reheat leftovers in a skillet to maintain crispiness.
