  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) light brown sugar
  • ½ cup (120ml) vegetable oil (Canola preferred)
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk (or milk + 1 tablespoon lemon juice)
  • 2 large apples, peeled and diced (about 2 cups)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, beat granulated sugar, brown sugar, and vegetable oil until blended. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
  4. Add the dry ingredients alternately with the buttermilk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.
  5. Gently fold in the diced apples with a rubber spatula.
  6. Pour batter into the prepared pan and spread evenly. Tap the pan gently to release air bubbles.
  7. Bake for 50-60 minutes, checking doneness with a toothpick. Tent with foil after 40 minutes if top browns too fast.
  8. Cool the cake in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt. Beat until fluffy and spreadable.
  10. Once the cake is completely cool, spread the cream cheese frosting evenly over the top. Optionally, add chopped nuts or a sprinkle of cinnamon.

Notes

Use room temperature eggs and dairy for better blending. Fold apples gently to keep texture. Avoid overmixing batter to prevent toughness. Cool cake completely before frosting to avoid melting. Frosting can be chilled if too soft. Baking the cake a day ahead improves flavor.
