  • 1 tbsp baking powder
  • ⅓ cup (65g) granulated sugar
  • ½ tsp salt
  • ½ cup (115g) cold unsalted butter, cubed
  • 1 cup (150g) fresh strawberries, hulled and diced
  • ¾ cup (130g) white chocolate chips
  • ¾ cup (180ml) heavy cream, plus extra for brushing
  • 1 tsp vanilla extract
  • 1 large egg
  • For the glaze:
  • 1 cup (120g) powdered sugar
  • 23 tbsp (30-45ml) milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until combined.
  3. Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or fork, quickly work the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized pieces.
  4. In a separate bowl, whisk together heavy cream, egg, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients. Gently fold with a spatula until just combined—avoid overmixing.
  6. Carefully fold in diced fresh strawberries and white chocolate chips, being gentle to avoid crushing the berries.
  7. Turn the dough onto a lightly floured surface and pat it into a 1-inch thick circle, about 8 inches in diameter. Cut the circle into 8 equal wedges and transfer them to the prepared baking sheet, spacing about 2 inches apart.
  8. Lightly brush the tops of the scones with a little heavy cream.
  9. Bake for 18-22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. Remove the scones from the oven and transfer to a cooling rack. Let cool for about 10 minutes before glazing.
  11. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk to get a drizzle consistency.
  12. Drizzle the glaze over the warm scones using a spoon or piping bag.
