  • 2 cups cooked turkey, shredded or finely chopped
  • 3 cups leftover stuffing
  • 2 large eggs, beaten
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • 1/2 cup bread crumbs (panko recommended)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine shredded turkey, leftover stuffing, beaten eggs, parsley, and a pinch of salt and pepper. Mix until well combined.
  3. If the mixture feels too dry, stir in chicken broth a tablespoon at a time until it holds together nicely.
  4. Use a cookie scoop or your hands to shape the mixture into golf-ball-sized portions. Place each ball onto the prepared baking sheet, leaving space between them.
  5. Brush melted butter over each stuffing ball for a crispy exterior.
  6. Bake for 20-25 minutes, or until the stuffing balls are golden brown and heated through.
  7. Remove from the oven and let cool slightly before serving.

Notes

If the stuffing balls aren’t holding together, add more breadcrumbs to firm up the mixture. Taste-test the seasoning before shaping the balls to ensure perfect flavor.
