  • 1/2 cup (75 g) fresh strawberries, hulled and sliced
  • 1/2 cup (75 g) fresh blueberries
  • 1 tablespoon (21 g) honey
  • 1 teaspoon (5 g) chia seeds (optional)
  • 1/2 teaspoon (2.5 ml) vanilla extract (optional)
  • A few fresh mint leaves (for garnish)
  • 2 tablespoons (15 g) slivered almonds, toasted (optional)

Instructions

  1. In a mixing bowl, scoop out 1 cup (240 g) of small-curd cottage cheese. Add 1/2 teaspoon (2.5 ml) of vanilla extract if using, and stir gently to combine.
  2. Hull and thinly slice 1/2 cup (75 g) of fresh strawberries. Rinse 1/2 cup (75 g) of blueberries and pat dry.
  3. Toast 2 tablespoons (15 g) of slivered almonds in a dry skillet over medium heat, stirring frequently, until golden brown and fragrant, about 3 minutes. Remove from heat and let cool (optional).
  4. Spoon the cottage cheese evenly into two small serving bowls. Top each with sliced strawberries and blueberries, dividing the fruit equally.
  5. Drizzle 1 tablespoon (21 g) of honey across the top of each bowl. Sprinkle 1 teaspoon (5 g) of chia seeds evenly for crunch and nutrition. Scatter toasted almonds if using, and garnish with a few fresh mint leaves.
  6. Serve immediately for the best texture and flavor.
