  • 1 cup fresh strawberries, hulled and halved or sliced
  • ½ cup (about 50g) granola (store-bought or homemade with nuts and oats)
  • 1 tablespoon honey or maple syrup (optional)
  • ½ teaspoon vanilla extract
  • 1 teaspoon chia seeds or flaxseeds (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Rinse 1 cup (about 150g) of fresh strawberries under cold water. Hull and halve or slice them depending on size. Pat dry if very juicy. Set aside.
  2. In a mixing bowl, add 1 cup (225g) of small-curd cottage cheese. Add ½ teaspoon vanilla extract and 1 tablespoon honey or maple syrup if using. Gently blend with a small whisk or fork until creamy but still slightly textured.
  3. Stir in 1 teaspoon of chia seeds or flaxseeds and 1 teaspoon fresh lemon zest if desired.
  4. Spoon the blended cottage cheese into a serving bowl or jar. Layer the prepared strawberries evenly on top, then sprinkle ½ cup (50g) of granola over the berries.
  5. Drizzle extra honey or maple syrup on top if desired, or add a few extra chia seeds for crunch. Serve immediately to keep granola crisp.
