  • 1 cup (240 ml) full-fat coconut milk
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons alcohol (rum, bourbon, or amaretto)
  • 1/2 cup (about 75 grams) fresh berries (strawberries or raspberries)
  • Dark chocolate shavings (optional)
  • Toasted coconut flakes (optional)
  • Mint leaves for garnish

Instructions

  1. Combine 1 cup (240 ml) of full-fat coconut milk and 1/4 cup (40 grams) of chia seeds in a mixing bowl. Whisk thoroughly until chia seeds are evenly distributed and no lumps remain, about 2 minutes.
  2. Stir in 2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract to sweeten and add aroma. Mix well.
  3. Gently fold in 2 tablespoons of your chosen alcohol (rum, bourbon, or amaretto), being careful not to overmix to maintain creaminess.
  4. Cover the bowl tightly with plastic wrap or transfer the mixture into individual serving containers. Refrigerate and chill for at least 2 hours or overnight for thicker texture.
  5. While chilling, wash and slice fresh berries. Toast coconut flakes in a dry pan over medium heat for 2-3 minutes if using. Grate dark chocolate for garnish.
  6. Once pudding has set, gently stir to loosen. Spoon into serving bowls or glasses. Top with fresh berries, toasted coconut flakes, dark chocolate shavings, and mint leaves.
  7. Serve immediately chilled or let sit at room temperature for 10-15 minutes if a softer texture is preferred.
